Jeera Rice with Chole Curry

Ingredients for Jeera Rice :

Ingredients for Chole Curry :

  • Chick Peas – 250 grams
  • Onions – chopped
  • Tomatoes – 2
  • Green Chillis
  • Salt
  • Turmeric powder
  • Chilli powder
  • bay leaf
  • Tadka ( How to prepare Tadka (పోపు) )
  • Oil
  • Ginger Garlic paste
  • Garam Masala Powder

Procedure for Jeera Rice :

  • Wash Rice and keep it aside.
  • take a pan and add ghee and hear for a minute and add the spices mixture and jeera seeds.
  • When jeera becomes slightly brown, add the rice to it.
  • for 1 cup rice, add 2 cups water and salt and pressure cook for 20 minutes.
  • you can garnish with fried curry leaves or chopped onions.

Procedure for Chole Curry :

  • Soak chickpeas overnight and mix salt and cook in pressure cooker for 20 minutes so that they become soft.
  • make tomato puree in a mixer grinder and keep it aside.
  • take a pan and add oil and prepare tadka ( How to prepare Tadka (పోపు) )
  • now add chopped onions and 2 spoons of ginger garlic paste and saute till they become golden brown.
  • now add tomato puree, 2 spoons of garam masala and salt  to the above liquid mixture.
  • now add the cooked chickpeas and add little water for gravy.
  • add salt, if you need more salt.
  • cook on low flame for 5-10minutes.
  • yummy chole curry is ready 🙂

Jeera Rice can be had with the just prepared chole curry 🙂

 

 

Aloo Matar Gravy

Ingredients :

  • Potatoes
  • Matar ( Green Peas )
  • Garam masala
  • Ginger garlic paste
  • Salt
  • Chilly powder
  • Chat masala
  • Chopped Onions
  • Chopped tomatoes
  • Tadka ( How to prepare Tadka (పోపు) )
  • Lemon juice

Procedure:

  • Pressure cook the potatoes and peel off the skin and then cut into pieces.
  • boil green peas until they become soft and keep aside.
  • Take a kadai and pour oil. add cut onions and saute them, until they become golden brown.
  • now add tadka, salt and ginger garlic paste to it.
  • now add tomato puree to the above mixture and mix well.
  • add little cashew nut paste, if you want thick gravy.
  • add little water, potato pieces and green peas to the gravy and cook on low flame for 5-10minutes.
  • garnish with coriander leaves and yummy aloo matar curry is ready 🙂

Curry Leaves Pakoda

Ingredients:

  • Curry leaves with stem
  • besan – 1/2 cup
  • red chilli powder – 1 spoon
  • coriander powder
  • cumin seeds
  • salt
  • water
  • oil

Procedure:

  • wash and dry the curry leaves.
  • take a bowl and mix besan, water chilli powder, coriander powder.
  • and enough water and mix the batter well.
  • put oil in the pan and let it pre-heat.
  • now dip the curry leaves stems in the batter and fry in oil.
  • remove excess oil on fried sticks using tissue paper.
  • tasty curry leaves pakoda is ready 🙂
  • this can be had with tomato sauce.

 

Beetroot halwa


Beetroot halwa

Ingredients :

  • Beetroot – grated
  • Sugar – as required
  • Milk – 1 or 2 cups
  • Elaichi powder
  • Almonds, Cashews – split pieces
  • Ghee

Procedure :

  • Wash and peel beetroot and then grate it.
  • heat ghee in a kadai and roast almonds, cashew pieces and keep aside.
  • in the same ghee kadai, add grated beetroot, some more ghee and roast for some time.
  • now add the milk and cook beetroots until they become soft.
  • and add elaichi powder, a spoon ful ghee and cook for few minutes.
  • Garnish with cashews and almonds, and serve hot.
  • yummy Beetroot halwa is ready 🙂

Pesarattu / Green Gram Dosa

Ingredients :

  • Green Gram – 1 cup
  • Rice – 2 spoonful
  • Onions – chopped
  • Ginger
  • Garlic
  • Tadka
  • Salt

Procedure:

  • Soak green gram and rice for 6 hours and then grind them to a paste.
  • grind onions, green chillis, ginger and add this to green gram paste and mix well.
  • take a tawa and pour oil and let it pre-heat.
  • pour the green gram batter like dosa and add chopped onions, little tadka on top.
  • yummy protein rich green gram dosa/ pesarattu is ready 🙂
  • This can be had with ginger chutney or coconut chutney.0

Spring Onion Rasam

Ingredients :

  • Spring Onions
  • Rasam powder
  • onions chopped
  • tomato – 1
  • curry leaves
  • green chillis
  • Ginger
  • garlic
  • little tamarind
  • salt
  • Tadka

Procedure :

  • In a pan, heat oil and add curry leaves, green chillies, chopped ginger & garlic and add tadka.
  • add onions now, and roast till they become golden brown.
  • now add tomato and let them break even completely.
  • now add rasam powder, little tamarind, salt and chopped spring onions.
  • add enough water for rasam and saute for 5 minutes.
  • yummy spring onion rasam ( soup ) is ready 🙂

Mushroom Lajawab

Ingredients :

  • Mushrooms – 250 grams
  • Corn flour
  • lemon
  • salt
  • chilli powder
  • turmeric
  • oil
  • soya sauce
  • coriander

Procedure :

  • wash and cut mushrooms and add corn flour, lemon, salt, chilli powder, turmeric and let them marinate for sometime.
  • then fry the mushroom pieces in oil.
  • add soya sauce and coriander for garnishing.
  • yummy mushroom lajawab ( manchuria ) is ready 🙂

Carrot Sooji Halwa

Ingredients:

  • Semolina
  • Carrot grated
  • sugar – 1 small bowl
  • Ghee – 1/2 bowl
  • Elaichi
  • Cashew pieces
  • Almond Pieces
  • water

Procedure:

  • add ghee to a pan and saute sooji ( semolina ) till it becomes golden brown.
  • now add grated carrots and saute for sometime.
  • add sugar and water and let them cook for sometime.
  • now add cashew, almonds, raisins and elaichi.
  • cook till it becomes semi solid paste.
  • yummy carrot sooji Halwa is ready 🙂

Chilli Chicken

Ingredients :

  • Chicken boneless – 500 grams
  • Oil
  • Onions
  • Tadka
  • Soya sauce
  • tomato sauce
  • chilli sauce
  • ginger garlic paste
  • corn flour
  • maida
  • salt

Procedure :

  • mix ginger garlic paste,corn flour,salt in little water.
  • wash chicken pieces and let them marinate in above mixture.
  • after that, shallow fry the chicken pieces and keep aside.
  • take a pan and add oil, ginger garlic paste, onions, tadka and saute for 5 minutes.
  • and soya sauce, tomato sauce, chilli sauce to it and salt and saute for sometime.
  • reduce the heat and add the chicken pieces now and stir.
  • serve hot with any rice item like fried rice, biryani etc 🙂

 

Ladies Finger Masala ( Bhindi Masala )

Ingredients :

  • Ladies Finger – 500 grams
  • Bengal Gram – 50 grams
  • Black Gram – 25 grams
  • Dry Coconut powder
  • groundnuts – 25 grams
  • Red chilli
  • jeera
  • Oil
  • Salt
  • Tadka

Procedure :

  • fry bengal gram, black gram and keep aside.
  • then take the fried bengal gram, fried black gram, dry coconut, jeera,Salt, ground nut, red chilli and make into a powder using mixer grinder.
  • then make slits on the ladies finger, and stuff this powder in them.
  • prepare tadka.
  • now take oil in a pan and fry these ladies fingers.
  • yummy methi Ladies finger is ready 🙂

Note : Same process can be followed for Brinjals as well. 🙂 for this, use purple colored brinjals.
