Thotakura Pakodi (Amaranthus Pakodi)

Ingredients:

  • Besan – 200gm
  • Thotakura (Amaranthus) – 1/2 cup
  • Green Chilli – 4
  • Onion – 1
  • Ginger – 1 Piece
  • Ajwain – 1/2 Spoon
  • Jeera – 1/2 Spoon
  • Salt
  • Oil

Procedure:

  • Take a bowl and mix the besan and chopped amaranthus, salt.
  • Grind the green chillies, ajwain, ginger and zeera.
  • Mix the chopped onions, green chillies, ajwain, ginger and zeera to the besan dough.
  • Take a pan and heat the oil, then put the besan dough in the oil as pakodas, yummy and healthy amaranthus thotakura) pakodi is ready.

Gongura Chicken ( Roselle Leaves Chicken )

Ingredients:

  • Chicken – 1 kg
  • Gongura/Roselle Leaves – 1 bunch
  • Ginger Garlic Paste
  • Salt
  • Turmeric
  • Coriander Powder
  • Garam Masala/ Chicken Masala
  • Priya Chilli Powder
  • Oil
  • Onions -1 big
  • Green Chillis – 2
  • Cloves – 2
  • Curd
  • Lemon

Procedure:

  • Remove Gongura leaves from the stem and wash them properly and then chop them nicely.
  • Boil the leaves and make it to puree using mixer grinder.
  • add salt, turmeric, coriander, garam masala, curd,lemon, ginger garlic paste, chilli powder to chicken for marinating and keep aside for 30 minutes.
  • take a deep bottomed pan, add oil,cloves, elaichi, chopped onions to it and cook until they become golden brown.
  • now, add the marinated chicken to it and close it with lid, and cook on medium flame for 10 minutes.
  • mix often.
  • now, add the gongura puree to it and mix nicely and cook on medium flame for 5 minutes.
  • yummy gongura/roselle leaves chicken curry is ready 🙂
  • the roselle leaves add a unique tangy flavor to chicken, which makes it very delicious.

Lauki ka Kofta

Ingredients:

  • Lauki ( Bottle Guard ) – 1/2
  • Corn Flour – 1 spoon
  • Besan – 2 spoons
  • Maida – 2spoons
  • Salt
  • Ginger Garlic Paste
  • Green Chillis – 2
  • Chilli Powder – 1 small spoon
  • Onion – 1
  • Tomato – 1
  • Turmeric
  • Oil

Procedure :

  • Peel off bottle guard and grate nicely. remove the seeds completely.
  • add salt, ginger garlic paste, besan, corn flour, maida to the grated bottle guard.
  • mix nicely and prepare round balls.
  • squeeze out all the water while making balls. this is important.
  • prepare tomato puree in a mixer grinder.
  • take a pan and add oil, green chilli,chopped onions, and cook until they become golden brown.
  • add tomato puree, chilli powder and turmeric to the above mixture and cook until the raw flavor of tomatoes goes off.
  • now, add a glassful water and put the lauki balls in it.
  • allow it to cook for 5 minutes.
  • yummy lauki kofta curry is ready 🙂

Aloo Matar Gravy

Ingredients :

  • Potatoes
  • Matar ( Green Peas )
  • Garam masala
  • Ginger garlic paste
  • Salt
  • Chilly powder
  • Chat masala
  • Chopped Onions
  • Chopped tomatoes
  • Tadka ( How to prepare Tadka (పోపు) )
  • Lemon juice

Procedure:

  • Pressure cook the potatoes and peel off the skin and then cut into pieces.
  • boil green peas until they become soft and keep aside.
  • Take a kadai and pour oil. add cut onions and saute them, until they become golden brown.
  • now add tadka, salt and ginger garlic paste to it.
  • now add tomato puree to the above mixture and mix well.
  • add little cashew nut paste, if you want thick gravy.
  • add little water, potato pieces and green peas to the gravy and cook on low flame for 5-10minutes.
  • garnish with coriander leaves and yummy aloo matar curry is ready 🙂

Curry Leaves Pakoda

Ingredients:

  • Curry leaves with stem
  • besan – 1/2 cup
  • red chilli powder – 1 spoon
  • coriander powder
  • cumin seeds
  • salt
  • water
  • oil

Procedure:

  • wash and dry the curry leaves.
  • take a bowl and mix besan, water chilli powder, coriander powder.
  • and enough water and mix the batter well.
  • put oil in the pan and let it pre-heat.
  • now dip the curry leaves stems in the batter and fry in oil.
  • remove excess oil on fried sticks using tissue paper.
  • tasty curry leaves pakoda is ready 🙂
  • this can be had with tomato sauce.

 

Salt Cookies

Ingredients:

  • Maida  – 2 cups
  • Butter – 50 grams
  • Sugar – finely powdered – 50 grams
  • Milk
  • Ajwain/ Carom seeds
  • Salt – 1 spoonful

Procedure:

  • Take maida in a bowl and add butter, sugar, carom seeds, salt and mix nicely.
  • add little milk and keep pressing the dough.
  • keep the dough aside for 15-20minutes.
  • Now, take a wide plate and pour some flour on it and apply all over the plate.
  • now, put the batter on top of it and roll it like Chapathi/Roti.
  • Cut in various shapes as you need like circle, square etc.
  • apply butter to baking tray and place these cut pieces on it.
  • Preheat the oven at 180 degrees. now, bake the cookies at 180 degrees for 10 minutes.
  • if you need more roast, bake for 2-3 minutes more.
  • yummy tasty salt cookies are ready 🙂

Spicy Onion Ladies Finger (Bhendi Ulli Kharam)

  • Ladies Finger – 500 grams
  • Ginger – small piece
  • Garlic – few
  • Onion – 2 or 3
  • Tomato – 2 or 3
  • Salt – as required
  • Turmeric Powder- as required
  • Chilli Powder- as required
  • Tadka ( How to prepare Tadka (పోపు) )

Procedure :

  • Cut ginger, garlic,onions and tomato into small pieces and put in a mixer grinder and make it to a paste.
  • add Salt, Turmeric Powder, Chilli Powder to the above paste.
  • now, make cuts to the ladies finger and insert this paste inside those cuts.
  • Now, add oil to pan and prepare tadka.
  • now, add stuffed ladies finger to the oil and let them cook in sim for 5-10 minutes.
  • Then add little water and cook for 5 minutes.
  • Yummy Ladies Finger Ulli Kharam ( Ladies Finger in Spicy Onion) i ready 🙂
