Hyderabadi Style Prawn Gravy

Ingredients:

  • Prawns – 250 grams
  • Onion – 1
  • Tomato – 1
  • Ginger Garlic Paste
  • Turmeric
  • Salt
  • Chilli Powder
  • Curd
  • Oil
  • Coriander Leaves and Powder

Procedure:

  • Wash and clean prawns well.
  • marinate prawns with salt, turmeric, ginger garlic paste, chilli powder, curd for 30 minutes.
  • Chop Onions and Tomatoes finely and make it to a puree using mixer grinder.
  • take a kadai and add oil and let it become hot. saute the marinated prawns in it. keep it aside.
  • take another kadai and add oil, chopped onions, green chilli and let them fry until the onions become golden brown.
  • mix the puree prepared above to the frying onions and add salt, turmeric, chilli powder, coriander powder and cook on low flame for 10 minutes.
  • now, add the prawns to it and add 1/2 glass water also. allow it to cook for 5 minutes.
  • don’t overcook the prawns.
  • yummy hyderabadi prawns gravy curry is ready πŸ˜‰

Chicken Balls and Rolls

Ingredients:

  • Chicken – 250 grams
  • Sandwich Bread – 1 pack
  • Ginger Garlic Paste
  • Chopped Onions
  • Salt
  • Chilli Powder
  • Curd
  • Lemon
  • Turmeric
  • Coriander
  • Chat Masala
  • Oil

Procedure:

  • add salt, turmeric, coriander, Chat masala, curd,lemon, ginger garlic paste, chilli powder to chicken for marinating and keep aside for 30 minutes.
  • now, take a pan add 2 spoons oil and add chopped onions and cook until they become golden brown.
  • now, add the marinated chicken pieces to the frying onion and cook on medium flame for 10 minutes. Cut chicken into small size pieces like keema.
  • Now, cut the edges of bread slices and dip them in water and squeeze each slice and then stuff the chicken curry in it and make into rolls or balls, as per your interest.
  • now, deep fry them until they become golden brown color.
  • stick, pumpkin seeds on top of it for taste.
  • yummu chicken balls/rolls is ready πŸ˜‰

Gongura Chicken ( Roselle Leaves Chicken )

Ingredients:

  • Chicken – 1 kg
  • Gongura/Roselle Leaves – 1 bunch
  • Ginger Garlic Paste
  • Salt
  • Turmeric
  • Coriander Powder
  • Garam Masala/ Chicken Masala
  • Priya Chilli Powder
  • Oil
  • Onions -1 big
  • Green Chillis – 2
  • Cloves – 2
  • Curd
  • Lemon

Procedure:

  • Remove Gongura leaves from the stem and wash them properly and then chop them nicely.
  • Boil the leaves and make it to puree using mixer grinder.
  • add salt, turmeric, coriander, garam masala, curd,lemon, ginger garlic paste, chilli powder to chicken for marinating and keep aside for 30 minutes.
  • take a deep bottomed pan, add oil,cloves, elaichi, chopped onions to it and cook until they become golden brown.
  • now, add the marinated chicken to it and close it with lid, and cook on medium flame for 10 minutes.
  • mix often.
  • now, add the gongura puree to it and mix nicely and cook on medium flame for 5 minutes.
  • yummy gongura/roselle leaves chicken curry is ready πŸ™‚
  • the roselle leaves add a unique tangy flavor to chicken, which makes it very delicious.

Vada with Chicken Gravy

How to prepare Vada :

Ingredients:

  • Urad Dal
  • Oil
  • Salt
  • Onions
  • Green Chillis

Procedure:

  • soak urad dal overnight and grind it in the morning with little water.
  • now, mix salt, chopped onions and green chillis and mix nicely.
  • take handful of batter and make it in round shape and deep fry in hot oil . This is the important step, so requires practice πŸ™‚
  • Vadas are ready.

How to prepare Chicken Gravy :

Ingredients:

  • Chicken – 500 grams
  • Oil
  • Ginger Garlic paste
  • onions
  • Chicken Masala
  • Salt
  • Chilli powder
  • Turmeric
  • Curd
  • Tomato
  • Cashews

Procedure:

  • wash and cut chicken pieces nicely.
  • marinate the chicken pieces in curd, ginger garlic paste, salt,chilli powder and keep aside.
  • now, cut onions, tomato and cashew into pieces and make it to a paste in mixer grinder.
  • prepare Tadka ( How to prepare Tadka (ΰ°ͺోΰ°ͺు) ) and pour oil and the onion tomato paste, fry until it becomes golden brown.
  • now,put the chicken pieces and cook on low flame for 10 minutes.
  • now,add water as required for gravy and cook for another 10 minutes.
  • Yummy Chicken Curry is ready πŸ™‚

Fish Onion Fry

Ingredients:

  • Pomfret Fish – 4 to 6 pieces
  • Onions – 1
  • Green Chillis – 2
  • Priya Chilli Powder
  • Ginger Garlic Paste
  • Turmeric
  • Salt
  • Curd – 2 spoons
  • Lemon – 1 spoon
  • Corn Flour
  • Rice Flour
  • Maida
  • Oil

Procedure:

  • Wash and cut into pieces normally.
  • Marinate with lemon, curd, ginger garlic paste, salt, chilli powder.
  • now, mix maida, rice flour, corn flour and dip the marinated fish pieces in the mixture.
  • now take a pan and add oil and fry chopped onions, until they become golden brown.
  • now, shallow fry the fish pieces in the onion oil mixture.
  • yummy Onion Fish fry is ready πŸ™‚

Coastal Andhra Pomfret Fry

Ingredients:

  • White Pomfret – 3
  • Priya Chilli Powder – 4
  • Eastern Fish Masala
  • Lemon
  • Corn Flour – 1 spoon
  • Rice Flour – 1 spoon
  • Salt
  • Onion
  • Ginger
  • Garlic
  • Oil
  • Turmeric

Procedure

  • wash pomfret nicely and remove eyes and fins.

  • cut the fish horizontally along the sides into 2 halves.
  • then turn the fish reverse and make four cuts. don’t cut so deep else fish will break.
  • mix chopped onions, ginger, garlic ,fish masala and put in a mixer grinder and make into a paste.
  • now mix add salt, chilli powder, fish masala, rice flour, corn flour, lemon juice to the paste.
  • now, fill this paste into the slits in fish and also apply on both sides of the fish.
  • now, shallow fry the fish on a pan until they become golden brown.

Pomfret Gravy

Ingredients :

  • Pomfret Fish– half kilo ( washed and cleaned with salt and turmeric)
  • Salt – 1 table spoon
  • Turmeric – 1 table spoon
  • Curd – 1 or 2 spoons full
  • Lemon
  • Chilli powder
  • Onions
  • Tomatoes for puree.

Procedure :

  • take washed and cleaned fish and keep aside.
  • add salt, turmeric, curd, lemon and chilli powder and apply to fish pieces and keep them aside for 30 to 45 minutes for marinating.
  • Then switch on stove and pour oil ,onions,and tadka( How to prepare Tadka (ΰ°ͺోΰ°ͺు) ).
  • add tomato puree, salt and chilli powder and stir for a minute.
  • To the above puree, add the marinated fish pieces and let it cook.
  • add water as required. if you need more gravy, add little more water.
  • Tasty Andhra Style Pomfret Fish curry is ready !!!
