Lauki ka Kofta

Ingredients:

  • Lauki ( Bottle Guard ) – 1/2
  • Corn Flour – 1 spoon
  • Besan – 2 spoons
  • Maida – 2spoons
  • Salt
  • Ginger Garlic Paste
  • Green Chillis – 2
  • Chilli Powder – 1 small spoon
  • Onion – 1
  • Tomato – 1
  • Turmeric
  • Oil

Procedure :

  • Peel off bottle guard and grate nicely. remove the seeds completely.
  • add salt, ginger garlic paste, besan, corn flour, maida to the grated bottle guard.
  • mix nicely and prepare round balls.
  • squeeze out all the water while making balls. this is important.
  • prepare tomato puree in a mixer grinder.
  • take a pan and add oil, green chilli,chopped onions, and cook until they become golden brown.
  • add tomato puree, chilli powder and turmeric to the above mixture and cook until the raw flavor of tomatoes goes off.
  • now, add a glassful water and put the lauki balls in it.
  • allow it to cook for 5 minutes.
  • yummy lauki kofta curry is ready 🙂

Radish Leaves Curry

Ingredients:

Procedure:

  • wash and chop the radish leaves and radish and boil them,till they become soft.
  • take raw groundnuts and roast them along with red chillis.Don’t burn them 😉
  • now, powder the roasted groundnuts and red chillis in a mixer grinder.
  • Take a pan and add salt and radish leaves and radish pieces to it.
  • prepare Tadka ( How to prepare Tadka (పోపు) ) and pour over the boiled radish leaves and mix nicely.
  •  now, mix the groundnut powder, green chillis and let it cook on low flame for 5-10minutes.
  • Yummy and healthy radish leaves curry is ready 😆

Aloo Matar Gravy

Ingredients :

Procedure:

  • Pressure cook the potatoes and peel off the skin and then cut into pieces.
  • boil green peas until they become soft and keep aside.
  • Take a kadai and pour oil. add cut onions and saute them, until they become golden brown.
  • now add tadka, salt and ginger garlic paste to it.
  • now add tomato puree to the above mixture and mix well.
  • add little cashew nut paste, if you want thick gravy.
  • add little water, potato pieces and green peas to the gravy and cook on low flame for 5-10minutes.
  • garnish with coriander leaves and yummy aloo matar curry is ready 🙂

Mushroom Lajawab

Ingredients :

  • Mushrooms – 250 grams
  • Corn flour
  • lemon
  • salt
  • chilli powder
  • turmeric
  • oil
  • soya sauce
  • coriander

Procedure :

  • wash and cut mushrooms and add corn flour, lemon, salt, chilli powder, turmeric and let them marinate for sometime.
  • then fry the mushroom pieces in oil.
  • add soya sauce and coriander for garnishing.
  • yummy mushroom lajawab ( manchuria ) is ready 🙂

Chilli Chicken

Ingredients :

  • Chicken boneless – 500 grams
  • Oil
  • Onions
  • Tadka
  • Soya sauce
  • tomato sauce
  • chilli sauce
  • ginger garlic paste
  • corn flour
  • maida
  • salt

Procedure :

  • mix ginger garlic paste,corn flour,salt in little water.
  • wash chicken pieces and let them marinate in above mixture.
  • after that, shallow fry the chicken pieces and keep aside.
  • take a pan and add oil, ginger garlic paste, onions, tadka and saute for 5 minutes.
  • and soya sauce, tomato sauce, chilli sauce to it and salt and saute for sometime.
  • reduce the heat and add the chicken pieces now and stir.
  • serve hot with any rice item like fried rice, biryani etc 🙂

 

Ladies Finger Masala ( Bhindi Masala )

Ingredients :

  • Ladies Finger – 500 grams
  • Bengal Gram – 50 grams
  • Black Gram – 25 grams
  • Dry Coconut powder
  • groundnuts – 25 grams
  • Red chilli
  • jeera
  • Oil
  • Salt
  • Tadka

Procedure :

  • fry bengal gram, black gram and keep aside.
  • then take the fried bengal gram, fried black gram, dry coconut, jeera,Salt, ground nut, red chilli and make into a powder using mixer grinder.
  • then make slits on the ladies finger, and stuff this powder in them.
  • prepare tadka.
  • now take oil in a pan and fry these ladies fingers.
  • yummy methi Ladies finger is ready 🙂

Note : Same process can be followed for Brinjals as well. 🙂 for this, use purple colored brinjals.

Prawns Biryani

Ingredients :

  • Mace ( Jaji kaya ) – 1
  • Cinnamon – 1 inch piece
  • Elaichi – 2
  • Clove – 8
  • Ghee – 2 table spoons
  • Basmati Rice – 500grams
  • Prawns – 250 grams
  • Green Chilli
  • Onions
  • Ginger Garlic paste
  • Salt
  • Water

Procedure :

  • Clean and wash the prawns.
  • Mix ghee and basmati rice and keep them aside.
  • Now grind mace, cinnamon, elaichi, clove into a rough paste and mix in the rice.
  • Take a pan and add Ghee, ginger garlic, clove, green chilli ,onions and then add prawns to it.
  • add water : for 1 cup basmathi rice, add 1.5 cup water.
  • add enough salt.
  • Allow it to boil and steam cook for sometime.
  • Yummy prawns biryani is ready !!
