Prawns Biryani

Ingredients :

  • Mace ( Jaji kaya ) – 1
  • Cinnamon – 1 inch piece
  • Elaichi – 2
  • Clove – 8
  • Ghee – 2 table spoons
  • Basmati Rice – 500grams
  • Prawns – 250 grams
  • Green Chilli
  • Onions
  • Ginger Garlic paste
  • Salt
  • Water

Procedure :

  • Clean and wash the prawns.
  • Mix ghee and basmati rice and keep them aside.
  • Now grind mace, cinnamon, elaichi, clove into a rough paste and mix in the rice.
  • Take a pan and add Ghee, ginger garlic, clove, green chilli ,onions and then add prawns to it.
  • add water : for 1 cup basmathi rice, add 1.5 cup water.
  • add enough salt.
  • Allow it to boil and steam cook for sometime.
  • Yummy prawns biryani is ready !!

Prawn Lollipop

Ingredients :

  • Prawns – 250 grams
  • Maida
  • Corn flour
  • rice flour
  • egg
  • Salt
  • Turmeric
  • Ginger Garlic Paste
  • Coriander Paste
  • Chilli powder
  • Lemon
  • Curd  1 spoon
  • Oil

Procedure :

  • wash and clean the prawns and add salt, turmeric powder, ginger garlic paste, chilli powder, lemon juice and curd and let them marinate for some time.
  • Take a kadai and add oil and prawns and let them cook for 5minutes and then keep aside.
  • now take egg white, and add corn flour, maida, rice flour 1 spoon each and add salt and chilli powder and beat it.
  • and then dip the prawns in it and fry on a pan. no need to deep fry.
  • tasty prawn lollipop is ready 🙂

 

Colacasia Soup ( చామదుంపల పులుసు )

Ingredients :

  • Chamadumpalu ( Colacasia ) – 250-300 grams
  • Oil
  • Onions – 2 or 3
  • Salt
  • Ginger Garlic paste -1 spoon
  • Tadka
  • Curry leaves
  • coriander
  • Turmeric powder
  • Chilli Powder
  • tamarind juiceProcedure :
    • heat oil in a pan and add cut onions,and stir until onions become golden brown.
    • boil the colacasia and peel the skin.
    • add ginger garlic paste and let it fry for another 2 minutes.
    • prepare tadka and add the onions, ginger garlic paste, chilli powder,turmeric to it.
    • add cut chillis, tamarind juice, water, salt and let them cook for sometime.
    • now put the colacasia pieces in the gravy and cook in low flame for 10 minutes.
    • then add coriander leaves on top for garnishing.
    • yummy chamadumpala pulusu ( Colacasia Soup) is ready 🙂

Junnu(జున్ను)- Colostrum milk Cheese

Ingredients :

  • colostrum milk (జున్ను పాలు) – 1 liter
  • Ordinary milk – 1 liter
  • sugar – 750kg
  • jaggery – 250 grams
  • pepper
  • cardamom

Procedure :

  • take a container and add colostrum milk,Ordinary milk and sugar and mix nicely.
  • sprinkle pepper and cardamom pieces.
  • now take pressure cooker and add water to it to 1/4th.
  • now, put the milk bowl in it and cover it with a lid.
  • make sure, the water do not touch the milk.
  • now, we need to pressure cook the milk mixture for 15 minutes.
  • now, switch off the cooker, allow it to cool and carefully remove the junnu using knife.
  • cool it in refrigerator and serve cool, it can be served hot as well.
  • yummy home made cheese is ready 🙂

Andhra Korameenu (Salmon) Pulusu

Ingredients :

  • Fresh Salmon Fish ( Korameenu ) Pieces
  • Oil
  • Onions – 2 or 3
  • Salt
  • Ginger Garlic paste -1 spoon
  • Tadka
  • Curry leaves
  • coriander
  • Turmeric powder
  • Chilli Powder
  • Green chillis
  • tamarind juice

 

Procedure :

  • heat oil in a pan and add cut onions,and stir until onions become golden brown.
  • add ginger garlic paste and let it fry for another 2 minutes.
  • in another pan, fry the fish pieces until the rawness disappears.
  • prepare tadka and add the onions, ginger garlic paste, chilli powder,turmeric to it.
  • add cut chillis, tamarind juice, water, salt and let them cook for sometime.
  • now put the fish pieces in the gravy and cook in low flame for 10 minutes.
  • then add coriander leaves on top for garnishing.
  • yummy salmon gravy curry is ready 🙂

 

 

Drumstick Bajji

Ingredients :

  • Drumsticks-3
  • Besan-4 spoons
  • rice flour-2spoons
  • ginger garlic paste-4spoons
  • coriander powder-1 teaspoon
  • masala powder. Baking soda
  • salt
  • chilli powder to taste

Procedure :

1. Boil drumsticks in water to 50%

2. Take besan,rice flour, ginger garlic paste, coriander powder, masala powder, salt, chilli powder, baking soda and add water to make a homogeneous paste.

3. Now, marinate the drumsticks in this mixture for 20 minutes.

4. Take a pan with oil for deep fry.

5. Fry these drumsticks on low flame.

6. Yummy drumstick bajji is ready to serve .

 

Home Made Chocolates

Ingredients :

  • Condensed Milk – 500 ml
  • sugar
  • Cocoa Powder – 5-6 spoon ful
  • Butter – unsalted – 100-200 grams
  • Milk
  • Liquid Glucose
  • Any light flavor like almond powder etc.

Procedure :

  • mix liquid glucose, cocoa and milk nicely.
  • take a plastic bowl and apply butter to it.
  • mix all the ingredients in the bowl and keep in microwave oven for 2minutes at 180 degrees.
  • then pour the mixture into moulds of your choice.
  • you can add broken almonds, cashew at this stage on top of the hot chocolate paste.
  • Allow it to cool and store in fridge.
  • yummy home made chocolates are ready 🙂
  • These chocolates can be wrapped in food grade paper to give a good look 🙂 these can be gifted as well.
