Multi Grain Jaggery Dosa

Ingredients:

  • Wheat Flour – 1 cup
  • Ragi (Finger Millets) Flour – 1/2 cup
  • Rice Flour – 1/2 cup
  • grated Jaggery – 1/4 cup
  • Elaichi Powder
  • Milk – 1 cup
  • Ghee

Procedure:

  • mix wheat flour, ragi flour, rice flour, jaggery,elaichi powder, milk, pinch of salt and add water as required, and prepare like dosa batter.
  • now, take a tawa and apply ghee on top and then pour the batter like dosa.
  • I used a set dosa pan, you can use normal pan also.
  • yummy and healthy multi grain dosa is ready 🙂
  • it’s a very healthy snack for kids.

Palak Poori

Ingredients:

  • Wheat Flour – 2 cups
  • Palak – 1 bunch
  • Salt
  • Ajwain
  • Oil

Procedure:

  • Boil chopped spinach leaves and green chillis and prepare like puree using mixer grinder.
  • mix the puree to the wheat flour, without adding additional water.
  • add salt and ajwain also.
  • now, make the dough into small balls and roll like puri.
  • deep fry in oil.
  • yummy palak puri is ready 😉
  • this can be had with aloo curry.

Vada with Chicken Gravy

How to prepare Vada :

Ingredients:

  • Urad Dal
  • Oil
  • Salt
  • Onions
  • Green Chillis

Procedure:

  • soak urad dal overnight and grind it in the morning with little water.
  • now, mix salt, chopped onions and green chillis and mix nicely.
  • take handful of batter and make it in round shape and deep fry in hot oil . This is the important step, so requires practice 🙂
  • Vadas are ready.

How to prepare Chicken Gravy :

Ingredients:

  • Chicken – 500 grams
  • Oil
  • Ginger Garlic paste
  • onions
  • Chicken Masala
  • Salt
  • Chilli powder
  • Turmeric
  • Curd
  • Tomato
  • Cashews

Procedure:

  • wash and cut chicken pieces nicely.
  • marinate the chicken pieces in curd, ginger garlic paste, salt,chilli powder and keep aside.
  • now, cut onions, tomato and cashew into pieces and make it to a paste in mixer grinder.
  • prepare Tadka ( How to prepare Tadka (పోపు) ) and pour oil and the onion tomato paste, fry until it becomes golden brown.
  • now,put the chicken pieces and cook on low flame for 10 minutes.
  • now,add water as required for gravy and cook for another 10 minutes.
  • Yummy Chicken Curry is ready 🙂

Vada and Chicken Curry makes a great combination 🙂

 

 

Vegetable Upma

Ingredients:

  • Sooji / Ravi / Semolina – 250 grams
  • Tomato – 2
  • Green Chilli – 4
  • Ginger
  • Onion – 1
  • Matar / Green Peas – 10 grams
  • Coriander
  • Tadka ( How to prepare Tadka (పోపు) )
  • Cashew pieces
  • Curry leaves
  • Oil
  • Ghee
  • Salt

Procedure:

  • lightly roast sooji in ghee and keep it aside.
  • chop all vegetables and keep them aside.
  • heat oil in a pan and prepare Tadka ( How to prepare Tadka (పోపు) ) , add curry leaves, ginger , green chillis, cashew pieces to it at this stage.
  • Add all vegetables and cook for 2-3 minutes.
  • Add 2 cups of water and salt to it and put the roasted sooji and mix nicely to avoid forming lumps.
  • cover and cook for few minutes.
  • stop cooking, once water started evaporating, and upma is moist.
  • yummy upma is ready 🙂

Ridge Gourd Dosa – Andhra Style

Ingredients :

  • Ridge Gourd – 250 grams
  • Rice – 100 cup
  • Chana Dal – 50 grams
  • Ginger
  • Red Chilli – 2
  • Green Chilli – 2
  • Onions Chopped
  • Coriander
  • Carrot grated
  • Oil
  • Salt

Procedure:

  • Soak rice and chana dal for 2 hours and keep aside.
  • put green chilli, red chilli , ginger, jeera to the above rice and chana mix and grind in a mixture grinder.
  • wash ridge gourds nicely and cut without peeling the skin, to preserve fibre and cut them into pieces.
  • now, put the cut ridge gourd pieces into the above mix in mixer grinder and then run mixer grinder again.
  • add salt to the mixture.
  • now, take a pan and put oil and pour like dosa.
  • sprinkle chopped onions, grated carrots, coriander etc on top for garnishing.
  • yummy ridge gourd dosa is ready 😉
  • this can be had with amla chutney.
  • This is a good breakfast for Diabetics and kids too.

 

Paniyaram ( Paddu )

Ingredients:

Procedure:

  • prepare tadka in a pan (How to prepare Tadka (పోపు)) and keep aside.
  • take idli batter and mix salt in it.
  • now add the tadka to the salter batter and keep aside.
  • take paniyaram pan and apply oil to the grooves.
  • now pour idli batter in the grooves and cook in low flame for 5 minutes.
  • once the batter looks cooked, rotate the paniyarams ( paddu ) so that the other side also gets cooked.
  • cook like this for 5 minutes.
  • now, take the paniyarams using a ladle and serve hot with coconut or ginger chutney 🙂

  • Take idlis and cut them into pieces.
  • deep fry them in oil and sprinkle tadka, salt and chilli powder.
  • this can be had with tomato sauce 🙂
  • Yummy fried idli is ready 🙂
