Ingredients:

  • Rice Flour – 200 grams
  • Jaggery – 200 grams
  • Grated Coconut – 100 grams
  • Moong Dal – 50 grams
  • Milk – 50 ml
  • Elaichi – few
  • Salt
  • Dry Fruits

Procedure:

  • Take a glass of water and boil it, once boiled, add rice flour to it and mix nicely to avoid forming lumps.
  • now, make them into small balls ans keep it aside.
  • fry moong dal and then boil them.
  • now, take a brass kadai on stove and add water, jaggery, grated coconut, and then let it cook and add the balls prepared above along with moong dal.
  • once it is boiled for 5-10mins, mix rice flour in milk,salt,elaichi and stir and add to the contents in brass kadai.
  • switch off stove after 2-3 minutes to avoid overcooking.
  • garnish with dry fruits.
  • yummy undrallu is ready 🙂

Radish Chutney

Ingredients:

  • Radish – 2
  • Ground Nuts – 2 spoon ful
  • Red Chillis – 3
  • Green Chillis – 2
  • Salt
  • Oil
  • Ginger
  • Tamarind Juice- 1/2 spoon
  • Tadka ( How to prepare Tadka (పోపు) )
  • Jaggery – 1/2 spoon

Procedure:

  • Wash Radish and peel the skin off and then cut nicely into small pieces.
  • fry those radish pieces in a pan and keep aside.
  • in the same pan, add red and green chillis, ginger, ground nuts and fry them a little and then let it cool.
  • now, make it to paste using mixer grinder.
  • add radish pieces, tamarind and jaggery also to the contents in mixer grinder and grind again.
  • now, put tadka ( ( How to prepare Tadka (పోపు) ) on it .
  • quick, yummy and healthy radish chutney is ready 🙂
  • this is a tasty combination with rice and dosa as well 🙂

 

Lauki ka Kofta

Ingredients:

  • Lauki ( Bottle Guard ) – 1/2
  • Corn Flour – 1 spoon
  • Besan – 2 spoons
  • Maida – 2spoons
  • Salt
  • Ginger Garlic Paste
  • Green Chillis – 2
  • Chilli Powder – 1 small spoon
  • Onion – 1
  • Tomato – 1
  • Turmeric
  • Oil

Procedure :

  • Peel off bottle guard and grate nicely. remove the seeds completely.
  • add salt, ginger garlic paste, besan, corn flour, maida to the grated bottle guard.
  • mix nicely and prepare round balls.
  • squeeze out all the water while making balls. this is important.
  • prepare tomato puree in a mixer grinder.
  • take a pan and add oil, green chilli,chopped onions, and cook until they become golden brown.
  • add tomato puree, chilli powder and turmeric to the above mixture and cook until the raw flavor of tomatoes goes off.
  • now, add a glassful water and put the lauki balls in it.
  • allow it to cook for 5 minutes.
  • yummy lauki kofta curry is ready 🙂

Sampenga Puvvulu

This sweet resembles flower sampenga ( champak ) , hence it is named like that. it is popular in Andhra Pradesh.

 

Ingredients:

  • Wheat Flour – 1 cup
  • Maida – 1 cup
  • Sugar – 100 grams
  • Suji – 1 cup
  • Ghee – 1/2 cup
  • Oil

Procedure:

  • Take a bowl and mix wheat flour, maida, sugar, ghee well and make it into dough by adding little water.
  • now, make round balls with the dough, just like you make for chapathi.
  • now roll the balls like chapathi.
  • now, make slits like cuts on the rolled dough.
  • now, hold both the ends of the rolled dough and roll it, just like you unwrap a chocolate. [ reverse process ].
  • now, take a pan and deep fry them, until they become golden brown.
  • keep them aside.
  • now, boil water in another pan and add sugar to make sugar syrup.
  • once sugar syrup is made, dip the roasted sampengalu in it.
  • yummy tasty sampenga puvvu sweet is ready 🙂

 

 

Sweet Potato in Jaggery Syrup

Ingredients:

  • Sweet Potatoes – 250 grams
  • Jaggery – 50 grams
  • Elaichi – a pinch
  • water

Procedure:

  • Place sweet potatoes in a vessel and put it inside a pressure cooker and boil. This will ensure, sweet potatoes won’t become too soft.
  • take a pan and put jaggery pieces and sprinkle little water and cook until it becomes like syrup.
  • now, cut the sweet potato into pieces and put them in the boiling jaggery syrup and mix nicely.
  • sprinkle elaichi powder on top.
  • Let it cool and yummy sweet potato in jaggery syrup is ready 🙂
  • This is excellent iron rich diet for school going children, pregnant women.

Ridge Gourd Dosa – Andhra Style

Ingredients :

  • Ridge Gourd – 250 grams
  • Rice – 100 cup
  • Chana Dal – 50 grams
  • Ginger
  • Red Chilli – 2
  • Green Chilli – 2
  • Onions Chopped
  • Coriander
  • Carrot grated
  • Oil
  • Salt

Procedure:

  • Soak rice and chana dal for 2 hours and keep aside.
  • put green chilli, red chilli , ginger, jeera to the above rice and chana mix and grind in a mixture grinder.
  • wash ridge gourds nicely and cut without peeling the skin, to preserve fibre and cut them into pieces.
  • now, put the cut ridge gourd pieces into the above mix in mixer grinder and then run mixer grinder again.
  • add salt to the mixture.
  • now, take a pan and put oil and pour like dosa.
  • sprinkle chopped onions, grated carrots, coriander etc on top for garnishing.
  • yummy ridge gourd dosa is ready 😉
  • this can be had with amla chutney.
  • This is a good breakfast for Diabetics and kids too.

 

Lemon Rice

  • mix salt and turmeric in rice and cook in pressure cooker and keep it aside.
  • mix tadka ( How to prepare Tadka (పోపు) ) , roasted ground nuts, red chilli, ginger pieces ,green chilli in the rice and mix nicely so that flavor is uniformly distributed.
  • Yummy Lemon Rice is ready 😉
