Coastal Andhra Pomfret Fry

Ingredients:

  • White Pomfret – 3
  • Priya Chilli Powder – 4
  • Eastern Fish Masala
  • Lemon
  • Corn Flour – 1 spoon
  • Rice Flour – 1 spoon
  • Salt
  • Onion
  • Ginger
  • Garlic
  • Oil
  • Turmeric

Procedure

  • wash pomfret nicely and remove eyes and fins.

  • cut the fish horizontally along the sides into 2 halves.
  • then turn the fish reverse and make four cuts. don’t cut so deep else fish will break.
  • mix chopped onions, ginger, garlic ,fish masala and put in a mixer grinder and make into a paste.
  • now mix add salt, chilli powder, fish masala, rice flour, corn flour, lemon juice to the paste.
  • now, fill this paste into the slits in fish and also apply on both sides of the fish.
  • now, shallow fry the fish on a pan until they become golden brown.
  • yummy Andhra Style Pomfret Fry is ready 🙂

Ingredients:

  • Rice Flour – 1 glass
  • Priya Red Chilli powder – 2 spoons
  • Til Seeds- 5 grams
  • Salt – as required
  • Water

Procedure:

  • Boil water and keep aside.
  • add chilli powder, til seeds with rice flour and salt and mix nicely.
  • now pour the boiled water in it and mix nicely and prepare dough.
  • now, roll the mix into thin cylinder shape and make it round.
  • deep fry in oil until they become golden brown.
  • tasty chegodilu is ready 🙂

Andhra Bobbattlu

This recipe is known with various names all over India. In Andhra, it is called bobbattlu, in Maharashtra, it is called Puran Poli, in Karnataka, it is called holige and Boli in Tamil/Malayalam.

Ingredients:

  • Maida – 150 grams
  • Jaggery – 50 grams
  • Grated Coconut – 50 grams
  • Ghee – 1 cup

Procedure:

  • Take maida in a bowl and add ghee and mix nicely and keep it aside for 2-3 hours.
  • take jaggery, grate it and put in a kadai and start cooking.
  • keep stirring until jaggery becomes soft.
  • to this jaggery, add the grated coconut and mix nicely.
  • Now, take the maida and ghee dough and make small balls and roll like poori/chapati.
  • now, place the jaggery – coconut mixture on the rolled dough and mix nicely.
  • now, roll again like poori/ chapati.
  • Take a pan and pour ghee on it and let it become hot.
  • now, toast the rolled dough until it becomes slightly golden.
  • serve hot 🙂
  • yummy bobbattu/puran poli/ holige/boli is ready 🙂

 

Chilli Bajji with stuffed potato

Ingredients:

  • Chilli Bajji – 6
  • Besan / Bengal Gram – 100 grams
  • Chilli Powder
  • Potatoes
  • Onions
  • Ajwain
  • Cooking Soda
  • Lemon

Procedure:

  • boil potatoes and peel their skin.
  • add salt, ajwain and chilli powder to boiled potatoes and keep them aside after smashing.
  • make a slit in the middle of chillis and remove all the seeds.
  • now, stuff the potato smash inside the chillis.
  • add salt, little chilli powder, little cooking soda and little water to besan flour and make it to a watery paste.
  • dip these chilli bajjis in the watery besan mix and deep fry in oil.
  • now, squeeze onion pieces into the slits and add little lemon juice.
  • Yummy chilli bajji with potato stuffing is ready 😉

 

Radish Leaves Curry

Ingredients:

Procedure:

  • wash and chop the radish leaves and radish and boil them,till they become soft.
  • take raw groundnuts and roast them along with red chillis.Don’t burn them 😉
  • now, powder the roasted groundnuts and red chillis in a mixer grinder.
  • Take a pan and add salt and radish leaves and radish pieces to it.
  • prepare Tadka ( How to prepare Tadka (పోపు) ) and pour over the boiled radish leaves and mix nicely.
  •  now, mix the groundnut powder, green chillis and let it cook on low flame for 5-10minutes.
  • Yummy and healthy radish leaves curry is ready 😆

Fried Baby Corn

Ingredients:

  • Baby Corn – 200 grams
  • Maida – 2 spoons
  • Corn Flour – 2 spoons
  • pepper powder – 1/2 spoon
  • Salt
  • Oil
  • Ginger Garlic paste

Procedure:

  • chop and boil baby corns with pinch of salt for few minutes.
  • sprinkle maida, corn flour, salt, pepper, ginger garlic paste with little water over the boiled baby corns and marinate for 15-20 minutes.
  • Deep fry in oil.
  • use tissue paper to remove the excess oil.
  • use coriander leaves for garnishing.
  • yummy baby corn fry is ready 🙂 it’s a healthy snack for kids.

Vegetable Upma

Ingredients:

Procedure:

  • lightly roast sooji in ghee and keep it aside.
  • chop all vegetables and keep them aside.
  • heat oil in a pan and prepare Tadka ( How to prepare Tadka (పోపు) ) , add curry leaves, ginger , green chillis, cashew pieces to it at this stage.
  • Add all vegetables and cook for 2-3 minutes.
  • Add 2 cups of water and salt to it and put the roasted sooji and mix nicely to avoid forming lumps.
  • cover and cook for few minutes.
  • stop cooking, once water started evaporating, and upma is moist.
  • yummy upma is ready 🙂
