Gongura Chicken ( Roselle Leaves Chicken )

Ingredients:

  • Chicken – 1 kg
  • Gongura/Roselle Leaves – 1 bunch
  • Ginger Garlic Paste
  • Salt
  • Turmeric
  • Coriander Powder
  • Garam Masala/ Chicken Masala
  • Priya Chilli Powder
  • Oil
  • Onions -1 big
  • Green Chillis – 2
  • Cloves – 2
  • Curd
  • Lemon

Procedure:

  • Remove Gongura leaves from the stem and wash them properly and then chop them nicely.
  • Boil the leaves and make it to puree using mixer grinder.
  • add salt, turmeric, coriander, garam masala, curd,lemon, ginger garlic paste, chilli powder to chicken for marinating and keep aside for 30 minutes.
  • take a deep bottomed pan, add oil,cloves, elaichi, chopped onions to it and cook until they become golden brown.
  • now, add the marinated chicken to it and close it with lid, and cook on medium flame for 10 minutes.
  • mix often.
  • now, add the gongura puree to it and mix nicely and cook on medium flame for 5 minutes.
  • yummy gongura/roselle leaves chicken curry is ready 🙂
  • the roselle leaves add a unique tangy flavor to chicken, which makes it very delicious.

Lauki ka Kofta

Ingredients:

  • Lauki ( Bottle Guard ) – 1/2
  • Corn Flour – 1 spoon
  • Besan – 2 spoons
  • Maida – 2spoons
  • Salt
  • Ginger Garlic Paste
  • Green Chillis – 2
  • Chilli Powder – 1 small spoon
  • Onion – 1
  • Tomato – 1
  • Turmeric
  • Oil

Procedure :

  • Peel off bottle guard and grate nicely. remove the seeds completely.
  • add salt, ginger garlic paste, besan, corn flour, maida to the grated bottle guard.
  • mix nicely and prepare round balls.
  • squeeze out all the water while making balls. this is important.
  • prepare tomato puree in a mixer grinder.
  • take a pan and add oil, green chilli,chopped onions, and cook until they become golden brown.
  • add tomato puree, chilli powder and turmeric to the above mixture and cook until the raw flavor of tomatoes goes off.
  • now, add a glassful water and put the lauki balls in it.
  • allow it to cook for 5 minutes.
  • yummy lauki kofta curry is ready 🙂

Coconut Jaggery Laddu

Ingredients:

  • Grated Coconut – 250 grams
  • Jaggery – 250 grams
  • Elaichi
  • Cashew

Procedure:

  • grate jaggery separately and keep aside.
  • mix grated jaggery and grated coconut and sprinkle little water and cook on a deep bottomed vessel until it becomes thick. stir continuously.
  • do not cook for long time or the mixture becomes hard.
  • now, add elaichi and cashew powder  to the mixture and stir slowly.
  • when the mixture becomes thick and warm, apply oil to your hands and prepare round shaped balls with the mixture.
  • let it cool for sometime.
  • yummy coconut jaggery laddu is ready 🙂
  • This is a very healthy snack for all age groups.

Fried Baby Corn

Ingredients:

  • Baby Corn – 200 grams
  • Maida – 2 spoons
  • Corn Flour – 2 spoons
  • pepper powder – 1/2 spoon
  • Salt
  • Oil
  • Ginger Garlic paste

Procedure:

  • chop and boil baby corns with pinch of salt for few minutes.
  • sprinkle maida, corn flour, salt, pepper, ginger garlic paste with little water over the boiled baby corns and marinate for 15-20 minutes.
  • Deep fry in oil.
  • use tissue paper to remove the excess oil.
  • use coriander leaves for garnishing.
  • yummy baby corn fry is ready 🙂 it’s a healthy snack for kids.

Sweet Potato in Jaggery Syrup

Ingredients:

  • Sweet Potatoes – 250 grams
  • Jaggery – 50 grams
  • Elaichi – a pinch
  • water

Procedure:

  • Place sweet potatoes in a vessel and put it inside a pressure cooker and boil. This will ensure, sweet potatoes won’t become too soft.
  • take a pan and put jaggery pieces and sprinkle little water and cook until it becomes like syrup.
  • now, cut the sweet potato into pieces and put them in the boiling jaggery syrup and mix nicely.
  • sprinkle elaichi powder on top.
  • Let it cool and yummy sweet potato in jaggery syrup is ready 🙂
  • This is excellent iron rich diet for school going children, pregnant women.

Sweet Corn Potato Chick Pea Chaat

Ingredients:

  • Sweet Corn Kernels – 1 cup
  • Finely chopped onion – 1
  • grated carrot – 1
  • Potatoes
  • Chick peas/ Chana – 1/2 cup
  • Chilli powder
  • Salt
  • Lemon
  • Coriander Leaves
  • Tadka ( How to prepare Tadka (పోపు) )

Procedure:

  • Soak chick peas in water for 6-8 hours.
  • Boil sweet corn kernels and chick peas and keep them aside.
  • boil potatoes and peel off the skin and mash them into a soft paste.
  • once the ingredients are ready, mix mashed potatoes, boiled sweet corn kernels, chick peas nicely in a bowl.
  • pour oil in a pan and saute chopped onions until they become golden brown.
  • Prepare tadka in a pan ( How to prepare Tadka (పోపు) ) and add the sauted onions, potato and mixture, salt and chilli powder to it.
  • add little water for the gravy and allow it to cook for 5 minutes.
  • sprinkle grated carrot and coriander leaves on top.
  • yummy and healthy sweet corn chick pea chaat is ready 🙂

Palak Paneer ( Spinach Indian Cheese Curry )

Ingredients:

Procedure:

  • Wash spinach ( palak ) nicely and chop into small pieces without the stems.
  • boil spinach in hot water and keep aside.
  • Take Paneer ( Indian Cheese ) and cut into pieces and shallow fry them in oil and keep it aside.
  • take the boiled spinach leaves and add 1 or 2 chopped green chillis and make it into a paste/ puree in a mixer grinder. keep the puree aside.
  • take  a pan and prepare tadka ( How to prepare Tadka (పోపు) ) and add chopped onions, salt, ginger garlic paste, chilli powder and saute it until , the onions becomes golden brown.
  • you can cut tomato at this stage, if you need tomato flavor as well.
  • now, pour the spinach puree in the pan and stir continuously.
  • add the paneer cubes and let it cook for 5-10minutes on low flame.
  • yummy palak paneer is ready 🙂 This is very good food for pregnant woman.
